After a rigorous control of the grape ripening process in the vineyard, upon arrival at the winery the grapes were destemmed and gently crushed, followed by alcoholic fermentation in stainless steel tanks with mechanical pressing, ending with maceration for 10 days under temperature control at 22-25ºC. Malolactic fermentation took place in a small volume stainless steel tank.
