Cortes Cima Incognito Red 2021

Incognito was born from the innovative and restless spirit of Carrie and Hans Jorgensen. At Cortes de Cima, plot 9C is the first vineyard of the Syrah grape variety planted in Alentejo. When in 1991 Hans Jorgensen planted the vines with grafts coming directly from the Rhône, in a limestone soil area on top of a hill, he did not imagine that the vineyard would produce a wine that would mark the region and the wines of Alentejo. This wine was produced exclusively from the Syrah grape variety. The grapes were rigorously selected as they were in an optimal state of ripeness. They were fermented without stems, at controlled temperatures, with regular delestage, and an extended maceration period of the skins to enhance the fruit aroma and achieve a good balance and structure of tannins. Aged for 8 months in French oak barrels (90%) and American oak (10%) until bottling.
