Soalheiro Bruto Alvarinho 2018

The Alvarinho grapes used in the vinification of Soalheiro Espumante are selected from vineyards with lower sugar concentration and fresh acidity, planted in granite-origin soil between 100 and 200 meters altitude. Melgaço, the northernmost region of Portugal, is protected by a range of mountains that allow a perfect balance between rainfall, temperature, and the number of sunshine hours necessary for the best ripening of Alvarinho grapes. The production of a sparkling wine from the Alvarinho grape requires a careful selection of the grapes. The must resulting from this selection ferments at a controlled temperature, producing the base wine for the sparkling wine. This wine undergoes a second fermentation in the bottle. The aging in the cellar, at a low and constant temperature for several months, allows this sparkling wine to show all the elegance of the Alvarinho grape. After this fermentation and aging phase, the "degorgement" is carried out, an operation that removes the yeasts present in the bottle and replaces the temporary metal capsule with the final cork typical of sparkling wine.
