Description
Vinification of Reguengos DOC Red Wine: The DOC grapes from the manual harvest of our members are unloaded and immediately destemmed and crushed. With the addition of selected yeasts, fermentation begins at a controlled temperature (28ºC). During this period, maceration is carried out by the timed remontage process, which lasts throughout the fermentation period, about 8 days. The wine ages for a short time in tanks, being stabilized, filtered, and bottled within one year.
