Description
Vinification of the São João Reserva Bruto Sparkling Wine: After a very delicate pressing of the grapes, harvested in the first half of September, the must fermented for 15 days in stainless steel tanks at a controlled temperature. The production, following the classic method, began in Spring, with the tirage, with the secondary fermentation taking place in the cellar for 15 days at 16 ºC, followed by a bottle aging period on the lees of 20 months.
