Sidónio De Sousa Merlot Red 2018

Vinification of Sidónio de Sousa Merlot Red Wine: Destemming/crushing and cooling of the grapes in the winery in small open vats, where skin maceration begins and later fermentation. The treading is done manually with wooden masses to increase the extraction of the wine characteristics of the Merlot grape variety. After slow fermentation in small open vats, the wine is transferred to cement tanks and stainless steel containers, where it rests until January of the following year, at which time it is clarified and racked into new French oak barrels where it ages for 6 months.
