Sidónio De Sousa Reserve Red 2019

Vinification of Sidónio D Sousa Reserva Red Wine: Crushing with partial destemming and cooling of the grapes in the winery in small open lagares, where skin maceration begins and later fermentation, without the addition of enzymes and yeasts. The treading is done manually with wooden masses to increase the extraction of the wine characteristics of the grape variety. After fermentation in small open lagares, the wine is transferred to cement vats and stainless steel tanks, where it rests until January of the following year, when it is clarified and racked into 4,000-liter barrels of seasoned national oak, where it aged for 12 months.
