Soalheiro Brut Rosé

Touriga Nacional grapes (red grapes) and Alvarinho are produced in the municipality of Melgaço in vineyards with a balance between sugars and acids perfect for sparkling wine production. The vineyards are planted in granite-origin soil between 100 and 200 meters in altitude. Melgaço, the northernmost region of Portugal, is protected by a range of mountains that allow an exemplary combination of rainfall, temperature, and the number of sunshine hours necessary for a slow and balanced ripening to produce quality sparkling wine. Vinification of Soalheiro Brut Rosé Sparkling Wine: Touriga Nacional grapes, characterized by low color intensity in our region, together with the Alvarinho variety, form the base of this very light-colored Soalheiro Brut Rosé Sparkling Wine. The Touriga Nacional variety complements the Alvarinho variety by providing mouth structure, giving elegance and persistence. The must resulting from this selection ferments at a controlled temperature, producing the base wine for sparkling wine. This wine undergoes a second fermentation in the bottle. After this fermentation and aging phase, the "degorgement" process is carried out, an operation that allows the removal of the yeasts present in the bottle and the replacement of the provisional metal capsule with the typical sparkling wine cork.
