Description
Description
Manual harvest for small 20 kg boxes. After total destemming, the grapes are foot-trodden in a vat for three days with cold pre-fermentative maceration. Fermentation takes place in stainless steel tanks at a controlled temperature of 24-26ºC, followed by pressing in wooden basket presses with a vertical hydraulic press. About 15% of the blend aged for 12 months in new Portuguese oak barrels.
