Description
Vinification of Borges AT - Alvarinho, Trajadura Green Wine: manual and mechanical grape harvesting. after the grapes arrive at the winery, pressing is carried out. the must from the pressed grapes is cooled to 8-12 ºC to allow static decantation. after decantation, fermentation begins with temperature control (14-16 ºC). at the end of fermentation, the wine is racked and begins aging on fine lees for 2 months.
