The Alto dos Amores – probably the most extraordinary landscape of Dão – has always been the meeting point for the lovers of the Vila de Santar. If, in the past, the magic of this landscape was used to win hearts, today, the grapes that grow there serve to conquer the most demanding taste of wine lovers. It is this love story that daily inspires all those who work to produce this single-varietal Encruzado from Casa de Santar. Vinification of Casa de Santar Vinha dos Amores Encruzado Branco 2016: Crushing with total destemming, gentle pneumatic pressing, natural static clarification, alcoholic fermentation at 16°C in new French oak barrels. Aging: 12 months in new French oak barrels, of which 3 months on fine lees – Batonnage. Followed by 6 months of maturation in bottle.
