Description
Vinification of Casa Velha Gouveio Branco: Gouveio grape variety, carefully selected and hand-harvested from the best plots of the Favaios plateau. After a pre-fermentative maceration for 72 hours, the tank is bled and the free-run must is selected to ferment without any prior clarification. Alcoholic fermentation takes place entirely in stainless steel tanks, at 16°C for 20 days. A 6-month aging with regular stirring of fine lees.
