Casa Velha Reserve White 2021

Vinification of Casa Velha Reserva BrancoThe grape varieties Gouveio, Viosinho, and Rabigato, located in the Favaios Plateau, are carefully selected and hand-harvested into 20 kg boxes. They undergo a 72-hour pre-fermentative skin maceration at low temperature. The tear juice resulting from the skin maceration then went through a natural clarification process by static decantation. Alcoholic fermentation took place in third-year French oak barrels and small stainless steel tanks for about 20 days at a controlled temperature. After alcoholic fermentation, a 12-month aging period began during which contact with the fine lees was promoted. After this period, the best wines were selected, with the final blend consisting of 70% wines from barrel fermentation and aging and the remaining 30% from wine fermented and aged in stainless steel.
