Vinification of Covela Reserva White Wine: Manual harvest, organized by vineyard plots to ensure picking at the right time. Transport of grapes in small boxes to avoid crushing. Manual selection of the bunches. Cold skin maceration. Total destemming followed by gentle pressing. Spontaneous fermentation in oak barrels from Austrian and French forests. Aging on the full lees, with periodic batonnage. No stabilization or filtration.
