Filipa Pato Flos Chestnut White 2022

White Wine Vinification Filipa Pato Flos Castanea: We fermented the Bical grape variety with skin contact after the complete destemming of the grapes. Chestnut flower was added as the only preservative. For two weeks, we performed manual treading in an open lagar until the end of fermentation. Afterwards, the solids were pressed in a traditional basket press. The wine aged partially in a barrel (500-liter oak cask) and partially in amphorae for one year, until it reached natural stability. "Flos Castanea" (Chestnut Flower in Latin) was inspired by our good friend João Goucho, grandson of the pioneer of biodynamics in Portugal, Fernando Paiva, from Quinta da Palmirinha.
