Ilustres Desconhecidos Rabigato White 2022

Ilustres Desconhecidos is a collection of unique and expressive wines, the result of the creativity and expertise of our winemakers. This wine originates from the Tapadinha vineyard, located in the Torto river valley (sub-region of Cima Corgo). This plot has more than a dozen white grape varieties planted at an altitude of 580m, and it is here that we evaluate their performance and investigate the best blends. This experimental vineyard is the ideal launchpad for our new wine collection dedicated to telling the stories, until now unknown, of our terroir. Only 666 bottles produced. Vinification: Gentle destemming followed by pressing and static clarification of the must. After these steps, the wine ferments in a 400L Flextank, a porous material reservoir that allows fermentation and subsequent aging with oxygen exchange but without any aromatic interference. This choice reflects the approach of revealing what each of these grape varieties can offer us in organoleptic terms, without exogenous interferences. With minimized sulfur additions and oxygen contact, in a tendentially reductive vinification, the result is the purest sensory profile we can achieve.
