Description
Vinification: The vinification of the three grape varieties occurs separately, with the batch made later. The grapes are hand-harvested and the pressing of whole clusters is done in a pneumatic press. After 48 hours of settling, the must ferments at 18ºC in 500L French oak barrels. After fermentation, the wine ages for 10 months in barrels with weekly batonnage for 2 months.
