Olho De Mocho Single Vineyard White 2023

The oldest vineyard of Herdade do Rocim has always been affectionately called "Olho de Mocho" because this spontaneous flower, scientifically named Tolpis barbata, is abundant there. Being special, it could only give rise to a unique and authentic wine that we now call "Olho de Mocho Single Vineyard." Vinification: Manual harvest in 12 kg boxes. After a 24-hour cold skin maceration period, fermentation took place in 500 L French oak barrels and cement tanks for 15 days at a controlled temperature. At the end of fermentation, the wine underwent daily batonnage. Aging in cement tanks and French oak barrels for nine months.
