    Vinification of Pedra Cancela Enologist's Selection White Wine: Total destemming, cold pre-fermentative skin maceration. After gentle pressing of the grapes, the must undergoes static decantation and is fermented at 15º C. Subject to batonnage in stainless steel after fermentation.
