Reguengos Doc White 2023

Vinification of Reguengos DOC White Wine: After selecting the grapes in the vineyards of our members, manual harvesting is carried out. At the winery, they are unloaded and immediately destemmed and crushed. Then, extracting enzymes are added and the must is cooled to a temperature of 10ºC. It rests for 8 hours to allow greater extraction of aromas from the skin. After this time, it is pressed and the obtained must is clarified by decantation. The temperature of the must is then adjusted to 15ºC, selected yeasts are added, and fermentation begins, lasting about 2 to 3 weeks. After fermentation, racking is done, and the stabilization and clarification process starts immediately.
