Titan Of Tavora Varosa Daemon 666 White 2020

TITAN of Távora-Varosa Daemon “Sescenti Sexaginta Sex” (666) is a white wine from an old vineyard, over 140 years old, located in the municipality of Sernancelhe, at an altitude of 850 meters. This vineyard, with an area of 0.80 hectares, grows on granitic and quartz soil, with the Cerceal grape variety predominating among other planted varieties. Vinification: The vinification was done with great simplicity and minimal intervention: fresh grapes at their ideal ripeness, handpicked into 20 kg boxes, were transported to the winery where they underwent a careful manual selection, destemming, and gentle crushing. Without pressing, it went directly to new French Oak barrels, where alcoholic fermentation and malolactic fermentation took place, followed by aging for another 24 months, with regular stirring of the fine lees and controlled temperature and humidity.
