Quinta De Cidro Pinot Noir Red 2023

Vinification: The grapes are handpicked and transported to the winery in 20kg boxes. After undergoing a careful manual selection, 50% of the bunches are destemmed, and the grapes are lightly crushed before being directed to the fermentation tank, while the remaining 50% are placed in the same tank with the whole bunch. Alcoholic fermentation of the must follows in stainless steel tanks at 24-26ºC. During fermentation, "punching down" is done both by foot and manually using a "jack". The wine ages in used French oak barrels for a period of 12 months until bottling.
