Description
Vinification of Quinta de Pancas Special Selection Cabernet Sauvignon Wine: The grapes were harvested on October 2, 2015, and taken to the winery. The grapes were vinified with a short cold maceration. They fermented at a controlled temperature of 28ºC for 8 days, with a daily regime of “delestage” and manual remontages. Malolactic fermentation took place in stainless steel tanks. The wine aged in barrels (50% new) for 15 months, followed by an extended bottle aging.
