    Vinification of the Conventual Red Wine: manual harvest in 20 kg boxes. Grapes fully destemmed, fermented in stainless steel tanks with temperature control at 28ºC, maceration for 10 days. Pneumatic pressing. Malolactic fermentation in stainless steel tank.
