Adega de Borba Vinhas do Mármore Red Winemaking: Wine produced from vineyards on red soils with a marble subsoil. Harvesting takes place during August and September. After maturity control, the grapes are harvested, received at the winery, destemmed and crushed, starting the alcoholic fermentation process at a controlled temperature of 24ºC, over a period of 7 days, using remontage to optimize the extraction of color, aromas, and flavors. In autumn, malolactic fermentation occurs, essential for the smoothness and softness of the wines. The wine stabilizes in winter through physical processes in stainless steel tanks. Before bottling, it is filtered.
