Description
At the beginning of August, the grape harvest takes place. The grapes are destemmed and crushed. Then the alcoholic fermentation process begins at a controlled temperature of 25ºC. During this period, maceration lasts for 7 days with remontage to optimize the extraction of color, aromas, and flavors. Next, malolactic fermentation occurs, which is essential for the smoothness and softness of the wines. After the time during which the wine stabilizes through physical processes in stainless steel tanks, the wine is filtered and bottled at the beginning of Spring.
