Vinification of Altanto Quinta do Ataíde Organic Red Wine 2020: Rigorous selection of the grapes, total destemming, gentle crushing and gravity transport to the stainless steel fermentation tank. Each fermentation is individually monitored, with temperatures and maceration movements (pumping over and délestage) adjusted so that each wine conveys the best of the grapes from which it originated.
