Description
Vinification of Borges Pérola Red: Total destemming of the grapes. Brief pre-fermentative maceration followed by fermentation in skins for 6-8 days, at a controlled temperature of 25ºC, with relatively frequent pump-overs. After alcoholic fermentation, the wine is separated from the skins with which it fermented and malolactic fermentation is induced.
