Description
Vinification of Borges Quinta da Soalheira Red: Total destemming of the grapes followed by gentle crushing. Brief pre-fermentative maceration followed by fermentation on the skins for about 6-8 days at a controlled temperature of 28 ºC with frequent pump-overs. After alcoholic fermentation, the wine is separated from the skins with which it fermented. Then the wine undergoes malolactic fermentation in the tank, followed by aging in French oak barrels for 9-12 months.
