Description
Description
Vinification of Borges Quinta de Simaens Branco: Mechanical grape harvest. After arrival at the winery, the grapes undergo skin maceration in a cold chamber before pressing. The must from the pressed grapes is cooled to 8-12ºC and decanted. After decanting, fermentation begins with temperature control (15-17ºC). At the end of fermentation, the wine is racked and begins aging on fine lees for 4 months.
