Description
Vinification of Borges Quinta de São Simão Aguieira Red Wine: Total destemming of the grapes. Brief pre-fermentative maceration followed by fermentation in skins for 6-8 days at a controlled temperature of 26-28º with relatively frequent pump-overs. After alcoholic fermentation, the wine is separated from the skins with which it fermented and malolactic fermentation is carried out. Part of the wine is aged in stainless steel tanks and another part is aged in French oak barrels for 15 months.
