Vinification of Cadão Reserva Red Wine: Manual harvest, with optimal ripeness criteria where the bunches are carefully selected. Skin maceration and alcoholic fermentation with temperature control in stainless steel tanks. Post-fermentation maceration followed by malolactic fermentation. Minimum aging of 3 years before bottling.
