Casa Velha Grande Reserve White 2021

Vinification of Casa Velha Grande Reserva Branco The grape varieties Gouveio, Viosinho, and Arinto planted in the Favaios Plateau are carefully selected and hand-harvested into 20 kg boxes. After harvesting, they undergo a 72-hour cold pre-fermentation skin maceration. The free-run juice resulting from the skin maceration then undergoes a natural clarification process by static decantation. Alcoholic fermentation took place in first and second-year French oak barrels as well as in small stainless steel tanks, lasting about 20 days at a constant temperature of 18ºC. After alcoholic fermentation, a 12-month aging period began during which contact with the fine lees was promoted. After this period, the best wines were selected, with the final blend consisting of 90% wine fermented in barrels and the remaining 10% fermented in stainless steel tanks.
