Vinification of Covela Escolha White Wine: Manual harvest. Harvest organized by vineyard plots to ensure picking at the right time. Transport in small boxes to avoid crushing. Skin maceration. Gentle pressing. Spontaneous fermentations in stainless steel tanks with temperature control. Aging on fine lees until mid-March. No use of enzymes and fining agents, when necessary, performed with bentonite. Wines stabilized by cold. Light filtration.
