At the entry-level quality tier of wines from Real Companhia Velha, the Evel has maintained a solid reputation for many years. The Evel wine is produced from vineyards located at the famous Quinta do Casal da Granja and Quinta do Cidrô, located in the municipalities of Alijó and S. João da Pesqueira, respectively. Vinification of Evel White Wine: The grapes are pressed in a pneumatic press. Fermentation takes place in stainless steel tanks with temperature control. The wine ages in stainless steel tanks until bottling.
