Menin BrancoVinification: After manual harvest, the grapes are transported in 18 kg capacity boxes to avoid damaging the integrity of the bunch. Once at the winery, the boxes are unloaded onto a sorting belt for the first selection of the grapes. This is followed by destemming, berry-by-berry selection, and crushing, after which they are gravity-fed to a pneumatic press. After must clarification, alcoholic fermentation began in stainless steel tanks at low temperatures around 14ºC, in order to preserve the varietal character of each grape variety. The alcoholic fermentation lasted approximately 15 days, after which, following a resting period, the different components aged for 6 months in stainless steel.
