Description
Vinification: Manual harvest. This wine results from two types of fermentation: initial maceration with temperature control and co-fermentation in used French oak barrels. Battonage for 12 weeks. Aging: 10 months aging in 600L French oak barrels (barrels aged 1 and 2 years). Climate: Continental Mediterranean. Hot and dry days, with large daily temperature variations.
