Vinification of Post Scriptum Red Wine: Grapes manually selected on a sorting table undergo a second mechanical selection process of berries. These are gently crushed before entering the vat and after inoculation fermentation begins with temperature control. Gentle maceration. Aging: 12 months in 400L French Oak barrels. Post Scriptum is a wine with a profile similar to Chryseia.
