Winemaking of Quinta da Pedra Escrita Organic White Wine: Manual harvesting into small perforated 15 Kg boxes, fermentation with cold technology, in a reductive environment, with temperature controlled around 16ºC. The grapes are pressed without crushing and without destemming under an inert atmosphere to preserve all the aromatic potential of the grapes. Great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entire wine ferments in used French oak barrels and remains there after a small racking over fine lees with periodic stirring "battonage" until the final blend is made at the end of Spring. Fermentation and aging for 6 months in French oak barrels with lees stirring until bottling, after which it aged in bottle for 4 months.
