Quinta de Pancas Chardonnay WhiteVinification: The grapes were unloaded directly into the pneumatic press and the champagne pressing cycle was carried out, that is, a gentler process separating each plot. The musts settled with cold for about 20 hours and the must from plot 29 fermented in new and used 500-liter French oak barrels and 225-liter barrels over 10 years old. The must from plot 34 fermented in stainless steel tanks at about 17ºC until the end of fermentation, at which point it was racked into old 225-liter barrels where fermentation finished. The aging took place on lees in barrels for 5 months
