Quinta do Pinto Sauvignon Blanc WhiteVinification: Night Harvest, in order to preserve all the aromatic components. Upon entering the winery, the grapes were destemmed and gently crushed, followed by a cold maceration for 4 hours, then an open-tread pressing was performed. Must clarification by cold decantation for 48 hours. Fermentation at a controlled temperature between 14-16ºC with indigenous yeasts, in a cement tank. Aging on fine lees for 3 months.
