Quinta Dos Carvalhais Harvest White 2023

Quinta dos Carvalhais Colheita Branco is a white wine from Dão of exceptional quality, the highest expression of elegance and richness. Heir to ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with flavors of intense delicacy and the unique personality of the region. Gouveio and Encruzado were harvested separately. The grapes were unloaded from 20 Kg boxes directly into the destemmer-crusher. After pressing, the must underwent static decantation. It was then placed in stainless steel tanks, where native yeasts were added. Part of the must, 10% of the Encruzado, fermented in used French oak barrels, and the rest remained in the stainless steel tank. The Gouveio fermented in stainless steel tank. Fermentation occurred at 18ºC, for about 20 days. Of this wine, 10% of the Encruzado fermented and aged about 6 months in 225L used French oak barrels. The remaining part of the batch (90%) fermented and aged in stainless steel tanks. The blending of barrel wine with tank wine contributed to achieving greater balance in the final blend between the wine and the aromatic components characteristic of the wood.
