Description
Vinification of Quinta dos Castelares Reserva Red: Manual harvest. Total destemming followed by crushing. The grapes are fermented by variety and by vineyard plot, with the aim of making a selection that allows a better final result. Fermentation in small capacity stainless steel tanks, at a temperature of 24ºC. Controlled and gentle maceration, with the aim of obtaining concentrated, aromatic, and elegant wines.
