Real Companhia Velha Incola Doc Red 2020

The Íncola harvest is truly a surgical harvest where only the grapes at the perfect ripeness levels for this wine's profile are handpicked. Upon arrival at the winery, the grapes pass over a manual sorting belt where clusters not in perfect ripeness and health conditions are removed - despite the sorting done in the vineyard, this second sorting allows identification of unwanted clusters that might have escaped the first hand. After sorting, the grapes are directed to small French oak vats where 80% of the clusters remain whole and with stems, while 20% are destemmed and crushed. Alcoholic fermentation of the must begins, and during this process, a light "punching down" is done and all pump-overs are done by bucket. The goal is always to seek elegance and finesse, avoiding excessive extraction. Malolactic fermentation and aging take place in 500 L barrels and used French oak casks for a period of 18 months until bottling, which occurs without filtration.
