Description
Vinification of Ribeiro Santo Grande Escolha White: Manual harvest. Grapes coming exclusively from Quinta do Ribeiro Santo. Total destemming and pressing. Decantation at low temperature for 48h in stainless steel tank. Fermentation started in stainless steel tank with indigenous yeasts, finishing in 500L French oak barrels with battonage. Aged in 3rd year French oak barrels for 24 months.
