Vinification of Ribeiro Santo Touriga Nacional Red Wine: Manual harvest. Total destemming. Prolonged maceration at low temperature before starting alcoholic fermentation in stainless steel tanks, with indigenous yeasts. Gentle pump-overs for extraction of color and aromas. Racking to new 225L French oak barrels and aging for 10 months.
