António Maçanita Rosé Vulcânico The Volcanic Series are wines of volcanic origin, where the soils, poor and rocky, challenge the very definition of agricultural soil. In this almost "mother rock", in the middle of the Atlantic and at the base of the highest mountain in Portugal, where nothing else could grow, the grapes of this Rosé Vulcânico ripened as much as the brave Azorean climate allowed. Vinification Selective manual harvest in 20Kg baskets, the bunches are carefully selected on a sorting table and then the grapes are gently crushed and transported to the fermentation tanks without the aid of pumps. Here they macerate for 3 to 6 hours at low temperature and the resulting bleeding ferments spontaneously at 12ºC in order to maintain all the aromatic potential.
