Description
Scala Coeli owes its name to the Monastery of Santa Maria Scala Coeli, commonly known as the Charterhouse Monastery, the place where the Carthusian monks lived in silence and prayer. It results from the best vinifications of each year using less traditional grape varieties in Alentejo. Obtained from the best vinifications of the harvest, using less traditional grape varieties in the region. In 2020, it resulted from the vinification of the Touriga Nacional grape variety, harvested on September 14. On this day, the grapes were carefully picked and taken to the winery, where cold pre-fermentative maceration was carried out, followed by alcoholic fermentation at a temperature of 28ºC and prolonged maceration. Total vatting of 30 days. Aged 15 months in new French oak barrels.
