Series Tinto Cao Red 2019

Tinto Cão is synonymous with Douro! One of the most appreciated grape varieties by current viticulturists in the region for its adaptability, resistance, and low productivity. A variety with high vigor, small berries, and very thick skin, which nonetheless offers us a less conventional approach to its vinification in order to discover the fresher and more elegant side of this variety. Vinification of the Tinto Cão Series: The grapes are hand-harvested and transported to the winery in 20kg boxes. After a careful manual selection, 30% of the clusters are destemmed, and the grapes are lightly crushed before being directed to the fermentation tank, while the remaining 70% are directed to the same tank with the whole cluster. This is followed by alcoholic fermentation of the must in stainless steel tanks at 24-26ºC. The wine ages in used French oak barrels for a period of 12 months until bottling.
