Sidónio de Sousa Lapso Red WineVinification: Destemming/crushing and cooling of the grapes in the winery in small open vats, where skin maceration begins and later fermentation. The treading is done manually with wooden masses to increase the extraction of the wine characteristics of the grape varieties. After slow fermentation in small open vats, the wine is transferred to cement tanks and stainless steel tanks, at which time the two grape varieties are blended. It rests for one month, after which it is racked to remove the coarse lees.
